Flourless Dark Chocolate Brownies

You know that moment when you're scrolling through Instagram and you happen upon a post that literally makes you salivate?  You pinch to zoom and wish more than anything that your phone had scratch-and-sniff?  Well that happened to me when I came across Anna from Urban.Apron's decadent Flourless Dark Chocolate Brownies.  

 

 

These fudgy dark chocolate brownies are incredible because they come together in hardly no time, and best of all they are grain-free!  Which nowadays means they are free of all sins, gluten ghouls, negative-side effects and bad vibes right?!  You betcha! 

 

 

To prepare the brownies begin by preheating your oven to 350 degrees.  Line an 8 X 8 inch pan with parchment paper. Grease with coconut oil or non-stick spray to cover the surface.  

 

 

Place the dark chocolate and butter in a microwave-safe bowl and melt in the microwave for 30 second intervals, stirring between each burst until completely melted and smooth.

 

For this recipe I used: Guittard, 70% Bittersweet Cocoa Baking Bars, Semi Sweet

 

 

  

Transfer the melted chocolate mixture to a larger mixing bowl and add in the brown sugar, eggs, cocoa powder, salt and vanilla. 

 

 

 

 

 

 

Stir to combine all of the ingredients. 

 

 

Pour the batter into the baking pan. 

 

 

Using a spatula do your best to smooth out the top. 

 

 

Anna says to bake for about 40 mins, but I checked mine at 35 because my oven runs hot, and it was done! The top should be hardened and somewhat firm to the touch.  A toothpick inserted in the center should come out pretty clean (a crumb or two is ok, but shouldn't be wet with batter.) 

 

Remove from oven and allow the brownies to cool in the pan for 30 - 60 mins.  Anna basically gives permission for you to rush through this step if your just dying to taste the brownies like I was! The result of rushing through the cooling stage will make for cracklier tops, but if you're going for rustic and unrefined luxury like I am then go for it. 

 

Invert on to a cutting board and sprinkle the tops with more cocoa powder.  Using a sharp knife cut into desired squares. Store in an airtight container for up to a week.   

Dark Chocolate Flourless Brownies

5 oz good quality dark chocolate (60% or higher) 
1/2 cup unsalted butter
1 cup plus 1 tbsp dark brown sugar
3 eggs, beaten
1/2 cup unsweetened cocoa powder
1/4 tsp. salt
2 tsp. pure vanilla extract (or vanilla bean if you have it on hand)
