I was tempted to name these "Freedom Nachos" because they are unencumbered by so many of the usual, (yet not-so-healthy) additions you'd typically find in a plate of comfort food nachos. This dish is dairy-free, grain-free, gluten-free, even legume-free, and vegan!  What!?  How is that even possible?  And are they even good?...  are two questions you may be asking yourself.  The answer to both is a resounding yes!  You do of course need to come to the table with a hungry tummy and an open mind.  Like I said these are nacho-average-nachos!  For the record, personally I am not a vegan, however, I r...

If you follow me on Instagram, you may have caught this still life that I snapped recently of a silver bowl overflowing with bright green guavas!  I styled this pic as an ode to one of my favorite accounts, @PlantsonPink.  I'm waiting patiently for the day that Lotte Van Baalen selects one of my pics for her feed!  This is what millennial pink dreams are made of folks.  Anyhoo, back to guavas!  These beauties were gifted to me by a co-worker who, knowing I hail from a tropical island, thought I would probably just flip over her fresh tropical fruits.  Boy w...

Here are a few things I've discovered this week.  #1 Don't be afraid of foods that are blue.  Throw caution to the wind and try out that viral butterfly pea flower tea from Thailand.  It's a dried flower that naturally turns foods a vibrant shade of bright blue with no yucky chemicals or added dyes! Available on Amazon here for only $3.55! Using just blueberries or blackberries as a base color for these popsicles just won't get you that "American flag" look that you are seeking for these fun patriotic pops.  But butterfly pea flower tea does just the trick.  If you can get over the fact that...
