I may have mentioned this before but I have a childhood girlfriend Sivan, who is a real-deal professional blogger.  The woman is a genius and creates the most lovely luxurious, yet real content on the internet!  I had the pleasure of growing up on Maui with Sivan during our middle school days.  About 8 years ago we reconnected via social media.  Sivan has always been a dear friend and is so encouraging to me when it comes my kitchen creations and sharing my recipes online.

Although I was born and raised in Maui, Hawaii, I've lived in California now for nearly a decade and over that time my love of Mexican cuisine has grown from an adoration to an obsession.  I have been know to eat tacos for both lunch and dinner, and my go-to is always carnitas.  Although I understand that traditional carnitas is simmered for hours in lard, this new-school version is prepared using an Instant Pot!

I owe a debt of gratitude to my husband's high school friend Bobby who introduced me my new boyfriend, Romesco.  This super spicy, super addicting Spanish sauce has turned out to be a complete game-changer in my kitchen.  Romesco has tons of variations and many uses.  I've dolloped it on salads, grilled vegetables, red meat, chicken, and fish.  I've folded it into omelets, used it as a marinade, added it to soups, served it with crudités, and spread it on toast!  It keeps in the refrigerator for at least a week, and it actually get's better as it rests!  I know this may b...
